The almost secret, no-sugar, all fruits and nuts PacoJet chocolate ice ‘cream’ recipe

Including gratuitous air quotes. But only fruits and nuts. Because cacao is a fruit. Technically, peanuts are a legume. Sorry.

It doesn’t work without a Pacojet, sorry. But used ones on eBay are reliably found.

All measures are approximate:

3/4 cup raw cashews, soaked in two cups of water for four hours. Discard the water.

8 dates. 10 if you like it sweeter.

1/2 cup of cocoa. More if you like it more chocolatey.

One frozen banana.

1/3 cup peanut butter protein powder. More if you like it nutty.

Handful of pistachios. No shells, please. Roasted or unroasted, not sure which is better.

2 1/2 cups oat milk, almond milk, hemp milk, banana milk (this is a thing), or possibly water, but why bother if it’s water? You can play with quantity here, depending on how thick you like it.

And then, if you want to push it, you can add 1 or 2 TB of coconut oil and 1 or 2 TB of good quality peanut butter. Both add fat and creaminess.

Blend in the Vitamix until mostly smooth.

Freeze for at least 12 hours at less than 10° F. Then put in the Paco.
